甜心八寶飯
I am not Shanghainese, but there is one Shanghainese dessert I like very much, it's the sticky rice pudding with assorted sweets. The reasons I like it, partly because it's made of sticky rice, and with red bean paste, it's super yummy. I like it but I don't eat it often, I just take it once in a while, especially the homemade one. The sticky rice pudding I made this time is with molten chocolate inside, this little trick makes the dessert more unique.
我不是上海人,但卻頗喜歡吃上海甜品八寶飯,其中一個原因是我愛吃糯米食品,加上甜红豆餡和各式乾果,真是太好吃了。雖然我愛吃八寶飯,但卻不常吃,只是偶爾吃一次,尤其是自家做的。今次我做的八寶飯更加入了流心巧克力,讓這傳統甜點更添了生氣。
Sticky Rice Pudding with Assorted Sweets and Molten Chocolate
For a 18cm glass bowl
Ingredients:
White Glutinous Rice 315g (about 2 rice cups)
White Sugar 2 tbsp
Oil 1 tbsp
Melted Butter 1 tbsp
Jello Candy, multi-colors 4 pcs
Red Melon Seed, shelled some
Red Date, seeded, cut into oval shapes some
Dried Cranberries some
Candied Lotus Seed some
Raisin some
Roasted Walnut some
Dried Longan some
Red Bean Paste 135g
Molten Chocolate Candy 5 pc
Mint leaf, shredded 1 pc (optional)
Osmanthus syrup 1 tsp
Maple syrup 3 tbsp
Method:
1. Wash and soak the glutinous rice for 4 hours, put the rice on the steam-cloth in a container, steam in the steam oven or in a wok for 35 minutes till soft and done
2. Add sugar, oil and melted butter into the cooked glutinous rice, mix well
3. Brush some water on the glass bowl, and lay a microwave oven wrap on it; arrange all kinds of dried fruits on it to your desire and put a layer of glutinous rice on top the dried fruits, and lightly press it firm. By using the glass bowl, you could easily view and adjust the dried fruit pattern
4. Put another layer of dried fruits, then put a layer of glutinous rice; and then add the red bean paste, then press the chocolate candies into the red bean paste, sprinkle it with red dates, and add a layer of glutinous rice and press it tight; Again, put a layer of dried fruits till reaching the top rim of the bowl, add in all the remaining glutinous rice, smooth and press it tight
5. Steam the bowl of rice at 80C in the steam oven or steam it in a wok over medium high fire for 40 minutes
6. Mix Osmanthus syrup with maple syrup well
7. When the bowl of sticky rice pudding is cooked, turn it upside down on a plate, top it with shredded mint leaf, and drizzle the Osmanthus and Maple syrup on top, and serve it hot

足夠:一個 18cm 玻璃碗
材料:白糯米 315g (約 2 米杯)白糖 2 tbsp
油 1 tbsp
溶牛油 1 tbsp
果汁圓形軟糖,多色 共 4 pc
紅瓜子,去殼 適量
紅棗,去核,切開裁成橢圓形 適量
紅莓乾 適量
糖蓮子 適量
葡萄乾 適量
烤合桃肉 適量
桂圓 適量
紅豆沙餡 120g
流心巧克力糖 5 pc
薄荷葉 ,切幼絲 1 pc (可免)
桂花糖 1 tsp
楓樹糖漿 3 tbsp
做法:
1. 糯米洗淨浸水4小時, 去水放有蒸布蒸鍋,隔水蒸或放蒸爐蒸至熟及微軟,約35分鐘
2. 糯米飯趁熱加入白糖、油及溶牛油拌勻
3. 玻璃碗抹點水,放上微波爐保鮮紙,隨意放上各式乾果,再放上一層糯米飯在乾果上,輕手壓實。用玻璃碗是方便檢視及調整圖案。

4. 再放另一層乾果,再放一層糯米飯;然後放入紅豆沙餡,再把巧克力糖按入豆沙內,鋪平,灑入紅棗碎,再加入一層糯米飯按實;又圍邊多放一層乾果至碗頂,把剩餘的糯米飯放入鋪平再壓實
5. 放蒸爐 80C蒸40分鐘或隔水中大火蒸40分鐘
6. 把桂花糖和楓樹糖漿混好
7. 八寶飯蒸好,反轉倒扣放碟上,灑上薄荷葉絲,淋上桂花楓糖漿,趁熱享用
