烤箱炭燒"鴛鴦"曲奇餅
When I say "Yuānyāng , many of you would probably know that it is a special drink from the Hong Kong-style coffee shop which we called "cha-chan-tang". It is milk tea mixed with coffee. It's smooth and having aroma of both Ceylon tea and coffee. Some people say that the best trick is to add one portion of coffee into one portion of tea, and then add milk. And some people say that the best Yuānyāng should contain 70% of milk tea plus 30% of coffee, but to me, I prefer to have more milk tea like 80% to go with 20% of coffee. So, the coffee flavor will not overwhelm the aroma of tea, but I could still smell coffee from every sip.
When traveling, I do not bring along much of my favorite coffee and tea, and do not have many tools for tea or coffee brewing. When craving, what I did, was just putting all the flavors that I like into cookies. And this time, I added a little charred flavor to the cookies by using oven.

如果我說"鴛鴦",很多朋友都知道它是港式茶餐廳的特式飲品, 也知道它特別之處在於用咖啡混合奶茶裡,它包含了奶茶的滑和咖啡中有奶茶、奶茶中有咖啡的香氣。有人說最好的鴛鴦是用一半奶茶加入一半咖啡,也有人說最比例是七分奶茶加三分咖啡,而我則喜愛八分奶茶加二分咖啡,希望奶茶中只帶淡淡咖啡香,而奶茶一定要醇厚不苦澀。如果咖啡帶點炭燒焦香味道就更佳。
人在外,沒有帶上理想的咖啡及茶葉,也沒太多工具冲出炭燒好咖啡,唯一想到的,是把所有想要的味道,通過自家做的曲奇餅帶出來。至於食譜,當然一如以往,是我想到便做,也把食材、份量和做法一一記下,在此和各位分享。
至於味道,是非常好吃,因為很配合我要求,微甜,而最重要是我在最後步驟用烤箱做出炭燒帶來的香氣。跟着我做一次吧! 你會發覺做起來是這麼容易。

Oven-Baked Chargrill-Flavored Yuānyāng Cookies
Ingredients
Unsalted Butter, softened 235g
Raw Castor Sugar, 130g
Salt a pinch

Egg 1 pc
Cake Flour 340g
3-in-1 Milk Tea powder 48g
Desiccated Coconut 8g
3-in-1 Coffee powder 12g
Dark Cocoa Powder 2g
Method:
1. Beat butter, sugar and salt till creamy and fluffy, add egg in, mix well
2. Mix flour, milk tea powder, coffee powder, cocoa powder and sift into the butter mixture, mix well and then add in desiccated coconut and mix well
3. Put cookie dough into a Ziploc bag and roll it into a tube, and then keep in the fridge for an hour
5. Slice dough into 6-7 mm thick, use fork to make patterns as you wish
6. Bake inside a preheated oven at 175°C for 15 minutes, flip cookies to the other side and broil at high fire for 1 to 1-1/2 minutes or until lightly charred.
Cooking Tips:
1. Instead of using broiler, you may lengthen the baking time to 20-22 minutes or until you smell the chargrilled flavor. No need to flip cookies over if not using broiler
2. This is a mild sweet recipe, adjust sugar to suit your taste
3. Do not use silicon cooking sheet for gettinging char-grilled flavor more easily

材料:
無鹽牛油,室溫軟身 235g
原糖糖霜 130g
幼鹽 少許
雞蛋 1 pc
低筋粉 340g
三合一奶茶粉 48g
椰蓉 8g
3合1 咖啡粉 12g
黑可可粉 2g
做法:
1. 將牛油,糖和鹽攪打至蓬鬆,加入雞蛋,再打鬆
2. 將麵粉,奶茶粉,咖啡粉倒入牛油混合物中,混好,加入椰蓉,再混好
3. 將曲奇餅糰放入Ziploc袋中,並將其滾成圓管形,放入冰箱內待一小時

雞蛋 1 pc
低筋粉 340g
三合一奶茶粉 48g

3合1 咖啡粉 12g

做法:
1. 將牛油,糖和鹽攪打至蓬鬆,加入雞蛋,再打鬆
2. 將麵粉,奶茶粉,咖啡粉倒入牛油混合物中,混好,加入椰蓉,再混好
3. 將曲奇餅糰放入Ziploc袋中,並將其滾成圓管形,放入冰箱內待一小時
4. 將麵團切成6-7 mm厚塊,用小义隨意壓出圖案
5. 放烤盆,再放入已預熱的175°C烤箱內,烘烤15分鐘,把曲奇餅翻過另一面,用上火高火燒烤1至1-1/2 分鐘或至有炭燒香味
提示:
1. 如果不用上火高火燒烤,曲奇不用翻轉,只需多烤5-7 分鐘至底部略烤至焦香或嗅到有焦香味即
2. 本食譜是微甜口味,可根據各自要求增加糖量
3. 本食譜不用矽膠墊,以便底部易於烤出焦香
