簡易香煎鵝肝配烤吐司

Just drove my family member to the airport for the United States this morning, and now I have time to write on my blog. When she was here, I enjoyed spending most of my time with her, and didn't check on Facebook much.
Pan-searing Foie Gras is not difficult, especially I chose to serve it on toast. I didn't fry big pieces of Foie Gras this time for not wanting to eat too many saturated fats in one meal. But I enjoy eating gourmet food anyway.

香煎鵝肝其實不難,尤其是我只簡易地用它伴烤吐司吃。 今次我沒有香煎一大塊鵝肝,因為不想一頓飯下來就吃了太多飽和脂肪。淺嘗美食還是我喜愛的。

Easy Pan-Seared Foie Gras on Toast

Ingredients:
-Frozen Foie Gras, cut into 3cm x 5 cm x 1.25cm  6 pcs
-Freshly Ground Black Pepper    to taste
-Freshly Grinded Sea Salt    to taste
-Sliced Bread, crusts removed, cut into 4cm x 6 cm x 1.25cm  6 pcs
-Garlic and Parsley salted Butter  1 tbsp
-Oil 1 tsp

-Peach Jam     1-1/2 tbsp (any fruit jams work)
-Lemon Juice   1 tsp
-Apple Slices,  3 thin slices (each cut into 2)
-Mint Leaves  6 pc

Method:
1. Transfer foie gras from freezer to fridge, and let sit for 10 minutes
2. Mix Peach jam and lemon juice in a skillet under medium low fire till hot, add in apple slices and cook for 2 minutes, dish up
3. Heat garlic and parsley butter with oil in a skillet over medium heat until bubbling. Fry bread pieces until golden brown on both sides, take out 
4. Take foie gras from fridge, season with salt and pepper. Heat a skillet over medium high heat until hot, add foie gras in, then reduce heat to medium and fry for 45 seconds and turn to the other sides for another 35-40seconds or until golden brown on both sides
5. To assemble, put half slice of apple with a little jam on top of the toast, add a mint leaf on top, then a little jam, and then foie gras.  Serve hot.

Cooking Tips:
1. Spray a little lemon juice on top of the sliced apple could stop it from browning
2. Mint leaves enhance the flavor of foie gras





簡易香煎鵝肝配烤吐司

材料: 
-急凍鵝肝,切成3 cmx 5 cm x 1.25cm   6 pc
-鮮磨黑胡椒   適量
-鮮磨海鹽     適量
-去皮麵包,切成 4 cm ×6 cm ×1.25cm  6 pc
-大蒜香草牛油   1 tbsp
-油   1 tsp

-香桃果醬   1-1/2 tbsp (可用任何果醬)
-鮮榨檸檬汁  1 tsp
-蘋果薄片  3 pc(每片一開二)
-薄荷葉    6 pc

法:
1. 將鵝肝塊從冰庫轉到冰箱內,放約 10分鐘
2. 在小鍋中,用中小火略煮熱香桃果醬、檸檬汁和蘋果片,約2分鐘
3. 用煎鍋中火加熱油及大蒜香草牛油,直至冒泡。將麵包塊煎至兩面金黃,取出
4. 從冰箱裡取出鵝肝,灑上鹽和胡椒調味。中高火燒紅煎鍋,加入鵝肝塊,轉中火煎45秒,翻轉面再煎35至40秒或直至兩面金黃
5. 組合:在烤吐司上放上半片蘋果連一點果醬,上加一片薄荷葉,加一點果醬,再放上鵝肝塊。趁熱享用。

提示:
1. 在切好的蘋果片上面撒一點檸檬汁可阻止蘋果片變色
2. 薄荷葉配鵝肝使口感更清新
