It is not easy to find fresh Octopus, but I bought it.  People think it is difficult to handle it, actually it is not, what you need to do, is to wash it in the clear water with salt, slice open the head, clean the dirt inside and take off the brown membranes and then wash it again.

The most important issue is how to turn the live Octopus into a yummy dish. I did not braise it for a long hour, but blanched it very quickly and chopped it small, and then mixed it with wasabi, mayonnaise, vinegar, sugar, salt and a little sashimi soya sauce, the taste was very outstanding.

難反而是如何把八爪魚煮得好吃。我今次沒有用上數小時把八爪魚炆煮,反而聽取魚販建議用快灼,之後切幼,加了日本辣根、蛋黃醬、醋、糖、鹽和少許魚生伴吃醬油,再灑上芝麻,又出奇地好吃。
