                                Homemade Pork Floss . 自家製豬肉鬆

Whenever you have leftover pork from long-boiled soup, don't throw it away, it could easily be turned into yummy pork floss, no need to dry it overnight and you don't have to shred it really fine. What you could do is, to let the machines do it for you if you have a bread machine and a stand mixer at home, of course, you could always do it with your own hands and your patience.

Before Roasted . 烤前

I love homemade pork floss especially those taste a bit sweet, it's yummy and costs me only a penny as it's all from the leftovers if it's not thrown to the garbage bin, so why not, let's do it together.


如果你煑了一鍋老火湯又剩下那吃不完的煑過湯瘦豬肉,那麼不要把它拋掉,好快它就可成為可口的香脆肉鬆; 不用如坊間說的要放冰箱趟開過一夜,也不用太花時間把它撕得太幼細,要做的工序就一切交給麵包機和廚師機代勞吧; 當然如你有時間又有耐性,全程用手撕、用手炒也無不可,同樣可行。

我愛吃肉鬆,尤其略帶甜味的, 因為入口滋味香脆,也不用太花費,而且取材自剩菜,總比隨手丟掉好,真是何樂不為呢,來來來,我們一起做吧。
Homemade Pork Floss

Ingredients:
Lean Pork from Soup  300g

Seasoning:
Rose Wine     10ml
Ginger Juice  10ml
Dark Sauce   7.5ml
Maggi Sauce  10ml
Oyster sauce  10ml
Sugar 30g
Chicken Powder  5g (Optional, Or use a pinch of fine salt instead)
Five Spices Powder 3g
White Pepper 5g

White Sesame  10g


Method:
1. Pat dry lean pork, tear it roughly into threads, or hammer it roughly by using the broad side of a cleaver; then beat it with a stand mixer at medium-high speed for 5 minutes

2. Put the pork threads into the bread machine, press the "jam" mode, then add in all the seasonings (except sesame), loosen the threads with a pair of chopsticks after the machine running for10 minutes, then let the bread machine to finish the job, the whole cycle is approx. 120 minutes; add in sesame at the last 10 minutes

3 Take out the pork floss when done, let cool. Enjoy

Cooking Tips:
1. Homemade Pork Floss can be done with a frying wok, air-fryer or oven, so it is all up to you





自家製豬肉鬆

材料:
煮過湯的瘦肉 300g

調味:
玫瑰露 10ml
薑汁  10ml
老抽   7.5ml
美極鮮醬油  10ml
蠔油    10ml
糖   30g
雞粉   5g (可免,或以少許幼鹽代替)
五香粉 3g
白胡椒粉 5g

白芝麻    10g

法:
1.  瘦肉用乾布索乾,可用手略撕細,或用刀背略拍鬆;隨即用廚師機中高速打鬆約 5 分鐘
2.  放肉絲入麵包機、按動 "果醬" 模式,再加入調味(芝麻除外),首10分鐘後,用筷子略拌鬆,之後讓麵包機完成整個程式約120分鐘,完成前10分鐘加入白芝麻
3.  果醬模式完成,取出待涼,即可享用


提示:
1. 其實自家製肉鬆也可用鍋手炒、用氣炸機炸鬆或用焗爐烤脆,悉隨尊便
