Lobster Dinner . 龍蝦晚餐
Got two Maine lobsters for dinner, love its tender meat, tasty flavor and not to firm lobster shell.
I did not want to grill the lobsters tonight as my hubby did not want to bother to crack the shell at the table. To make it simple, I just submerged the two lobsters in a bath of salted boiling water, let the salt-water brine add flavor to the meat. Eight minutes boiling time was just right for the medium-cooked lobsters, and for better texture, I soaked the lobsters in the icy water bath till cool. Since the shell of the Maine lobsters are soft, it was not difficult at all to extract the meat from the lobster body, claws and knuckles. I kept the lobster heads for shallow-frying for better presentation. Lobsters cooked with linguine and wild mushroom soup are my two-course dinner tonight....simple and satisfying.

今晚不想吃烤龍蝦,外子常嫌剝殼麻煩。最方便莫過於煮個龍蝦肉意式闊麵,加個野菌濃湯,簡簡單單又一餐。
我用濃鹽水浸煮龍蝦八分鐘至七成熟,再浸冷水收緊肉質。之後拆肉配闊麵,龍蝦頭半煎炸伴碟。其實美味都可以好簡單。
