Easy Savory Dutch Baby Pancakes with Iberico Ham and Fried Egg . 簡易荷蘭小薄煎餅配火腿煎蛋

"Gosh, that's just great!" I did not take much time to prepare and to cook Dutch Baby Pancakes, and what you basically need to have are All-purpose flour, eggs, milk, butter and salt for the pancakes. For the toppings, it could be as simple as fried eggs, ham, onions and any kinds of veggies that you have at home. I usually have all these ingredients with me, so I could make dutch baby whenever I want to, I just do not make the sweet Dutch Baby Pancakes most of the time as I do not have a sweet tooth, and I like having the savory ones sometimes for lunch and sometimes for dinner, just whenever I want to have one.
“嘩,實在太好味啦!簡易荷蘭小薄煎餅的做法實在簡單。在家裡只要有麵粉、雞蛋、牛奶、牛油和鹽,就可以做到;至於配料也是悉隨尊便,可以隨手煎個蛋,配上火腿,洋蔥或其他蔬果。我家經常齊備以上材料,想到要吃,立刻動手造就是。我也造荷蘭小甜薄餅,但要說喜歡,還是來個咸味的口感更豐富。簡簡單單已經是一頓可口的午餐或晚餐了。



Easy Savory Dutch Baby Pancake with Iberico Ham and Fried Egg 

Ingredients: Enough for 3 portions (each in a small skillet)

For Dutch Baby:
Large Eggs 3 pc
Whole Milk  180ml
Unsalted butter, melted  15g  for batter
All-purpose flour  70g
Cornstarch   15g
Salt   2g
Mixed herbs  1g
Black pepper, freshly ground  a pinch

Unsalted butter 30g for for greasing the skillets

For Toppings: (to your desire, the listed are for each of my Dutch Babies)
Iberico ham  2 slices 
Egg 1 pc
Onion, shredded  1/6 pc
Tomato, sliced  1/6 pc
Capsicum, shredded 1/6 pc
Basil or Mint for garnishing (optional)

Method:
1. Preheat oven at 230C
2. Beat eggs using stand mixer on high speed till frothy about 30 seconds, add milk, butter, salt, mixed herbs and black pepper and beat for another 10 seconds; mix in flour and cornstarch gradually using lower speed until well combined. Let the batter stand for 20 minutes.
3. Heat up cast iron skillets till very hot, put 10g butter on each skillet and swirl to melt the butter and make sure the butter coating the bottom and sides of the pans
4. Pour batter on top of the butter, tilt the pans and let batter run along the sides and bottoms evenly
5. Place the skillets in the oven, bake until the Dutch Baby is puffed and browned across the top and the sides about 20 minutes
6. Prepare your toppings while baking
7. Top the Dutch Baby as you like, I put slightly sauteed onion, tomatoes and shredded capsicum onto them and topped it with an egg of sunny-side up and arranged the Iberico ham next to the egg.  And garnish with basil and mint.

Cooking Tips:
1. You can use food processor, blender or hand to mix the batter.







簡易荷蘭小煎餅配西班牙火腿及煎蛋

材料:

麵糊用-
大雞蛋 3隻
全脂牛奶 180ml
無鹽溶牛油 15g (麵糊用)
中筋麵粉 70g
粟粉 15g
鹽 2g
雜香草 1g
即磨黑椒碎 隨意

無鹽牛油 30g (熱鍋用)

配料:(隨意 ,以下是配我造的每個小煎餅分量)
西班牙火腿 2片
蛋 1 隻,煎好
洋蔥 1/6個,切條
番茄 1/6個,切片
彩椒,1/6個,切條
羅勒、薄荷 少許 (裝飾用)

做法:
1. 預熱烤爐 230C
2. 用廚師機高速打蛋至鬆身約30秒,加入牛奶、 牛油、鹽、雜香草、黑椒碎多打10秒至混和;轉中低速混合中筋粉和粟粉。讓麵糊鬆弛 20 分鐘,分成 3 份。
3. 中大火燒熱各煎鍋至大熱,每鍋加入10g牛油,快手溶至牛油覆蓋鍋鍋包括邊位
4. 快速把麵糊倒入熱鍋牛油上,再搖勻使麵糊鋪滿全鍋連邊位
5. 隨即入烤爐,烤約 20 分鐘至小煎餅脹起 2 至3 吋,餅面前和餅側都烤得金黃或褐黃
6. 煎餅烘烤時,先預備配料如炒好洋蔥、番茄和彩椒及煎好蛋,取出火腿片
7. 小煎餅出爐後,先放上炒好雜菜,旁放煎蛋,再圍上火腿片;用羅勒和薄荷裝飾。

1. 不用廚師機打麵糊,可用攪拌機或手打
