People say eating vegetarian meals is boring, but I think it can be interesting. When I am in Hong Kong, I try to eat three vegetarian dinners a week, partially for health and partially for fun as eating meats everyday is kind of tedious too.

I don't like having same dishes within a short period of time, so no matter if I prepare meat or vegetarian dishes, I like thinking of some new combinations, just like having something new everyday.

Today I have my vegetarian dinner in a western way, Salad and Pasta. I am going to share more and more of vegetarian dishes in future, I bet you won't feel bored and believe that vegetarian cooking could be very interesting.

I seldom buy shop-bought pasta as my hubby loves my homemade pasta, I am going to share with you a simple way of making homemade egg pasta today....go see the recipe



人們常說吃素很沉悶,但我覺得這很有趣。 如果我在香港,我盡量安排每周三晚吃素當然部份原因是覺得吃素健康,另一個原因是吃得肉多,吃素可轉換一下口味。

我不愛在短時間重複煮或吃相同菜式,所以不論煮肉類還是素食,我都喜歡嘗新、嘗試做新菜式;這樣做使我看到轉變,從而得到從轉變帶來的趣味。

今天我吃西式餐:沙拉和意式闊麵。 日後我會分享更多素食菜餚,我相信會讓你覺得素食烹飪原來可以很多變和很好味道。

我很少買現成意大麵,因為外子只愛吃我自家製的,因為可以因應不同醬汁配上不同口意大利麵....先來看看我今天造的意式蛋闊麵

Homemade Egg Pasta

Ingredients:Bread Flour  270g
Cake Flour  30g
Duck's Egg  95g
Chicken's Egg  95g
Salt 3g
Olive Oil  15g

Method:
1. Put all the ingredients except oil into a stand mixer and use dough hook, knead over medium speed for about 10 minutes; add oil and knead for another 5 minutes. You may use bread machine and use udon mode, beat for 15 minutes Or use hand to knead it till the dough shiny and smooth about 15 minutes as well.
2. Let the dough rest for 1/2 hour
3. Roll the dough thin manually by rolling pin or using a pasta machine from thick to thin by adjusting the setting till your desired thickness, and cut using the noodle cutter or by hand; Remember to dust extra flour when rolling and cutting to prevent pasta sticking together
4. let dry

Cooking Tips:
1. You may use only duck eggs or chicken eggs; duck eggs make the pasta more al dente 
2. Duck eggs have a richer flavor
3. Blanching time for pasta is only from 2 to 5 minutes depends on the pasta softness you want




自家製意式蛋闊麵                                       

材料:
高筋粉 270g
低筋粉  30g
鴨蛋   95g
雞蛋   95g
鹽    3g
橄欖油  15g

做法:
1. 把所有材料加入廚師機中,用麵團鈎,中速揉打約10分鐘; 加油並揉 5分鐘。 您可以使用麵包機,並用烏冬模式,揉打15分鐘,或用手搓麵團至光滑約15分鐘。
2. 讓麵團鬆馳半小時
3. 用擀麵杖或麵條機從厚到薄擀麵,然後用麵條機或手切麵, 切記在擀麵和切割要灑粉防沾
4. 掛起麵條待乾

提示:
1. 你可只用鴨蛋或雞蛋; 鴨蛋使麵條更加彈牙
2  鴨蛋較雞蛋更有濃香
3. 煮新鮮麵條需要較短時間約 2 至5 分鐘,視乎各人口味
