I have been extremely busy these past two weeks, it is difficult to find time sitting down, write and share.

A friend of mine asked me lately for an easily recipe for pizza and she said she did not have the patience to develop natural starter for it, she just wanted to have something easy, simple and zero-failure. I said no problem, here you go, pizza made with everything dough. You may make it into easy breads as well, just add more sugar for sweet buns and different ingredients for different flavors. I will make it into a series, and will modify it into different recipes with full details from time to time.

Everything Dough (1)...Margherita Pizza

Ingredients:  

Everything Dough       

Bread Flour  250g
Cake Flour     50g
Fresh Yeast    12g (Or Instant Yeast 4g)
Sugar   10g
Salt       4g
Oil         2 tbsp
Water 170-190 ml (depending on the humidity and flour)

Pizza Toppings-
Olive oil 1 tbsp
Garlic    1 tbsp
Italian tomato sauce or Pizza Sauce 60g
Mozzarella cheese, thinly sliced ​​100g
Cherry tomato, cut into half   10 pc (or use 2 large tomatoes, thinly sliced)
Fresh Basil  10 pieces
Black Pepper   to taste
Salt    to taste
Extra Virgin Olive Oil   a little

Method:
1. Put all the ingredients into a chef's machine or a bread machine, knead it into a soft dough,round it and cover it with a wet towel and let it proof till doubled in size, about 40-50 minutes; hand-kneading is also fine
2. Preheat oven 220C with fan or 240C without fan
3. Prepare pizza toppings; mix olive oil and garlic and let stand for 15 minutes
4. Press the dough flat after first rice, round and let it relax for 10 minutes, roll it with a rolling pin to your desired thickness and place on a pizza pan or stone
5. Brush the garlic oil onto the crust, then pizza sauce, lay the Mozzarella cheese and tomatoes randomly on the crust; bake for 15 minutes at the middle rack of the oven; then remove and sprinkle in black pepper and salt to taste, and then bake at the top rack for 1 more minute, remove and sprinkle in the basil leaves and drizzle a little of extra virgin oil on top, and enjoy

Cooking Tips::
1. The dough can be made into thin, medium and thick pizza, just roll it to your desired thickness; preheat the oven in advance, so pizza could be sent into the oven right after putting the toppings on. It could stop pizza from rising tremendously, which may affect the thickness that you want





萬用麵糰之一…瑪格麗特薄餅

材料: 

萬用麵糰                                   
高粉  250g
低粉   50g
鮮酵   12g (或速酵 4g)
糖      10g
鹽        4g
油        2 tbsp
水    170-190ml(視乎粉受水程度)

薄餅
油  1 tbsp
泥      1 tbsp
醬   60g
Mozzarella    100g
茄 半    10 顆 (茄 2 片)
勒     10
碎   
鹽        
油   

法:
1.  把所有材料放入廚師機或麵包機打成麵糰,手搓也可;搓圓,上蓋濕毛巾至兩倍大,約40-50分鐘,不用二發
2.  預熱帶風烤箱 220C 或 240C 不帶風
3.  準備好薄餅浸15 
4.  按平排氣,滾圓,鬆弛10
5.  薄餅面抹上蒜泥油,再抹上Mozzarella 烤15烤1
