It is a tradition for the Chinese, the first full moon day of the lunar year is called as Spring Lantern Festival; and we eat Glutinous rice dumplings in sweet soup that evening after dinner.

For Glutinous rice dumplings, I do not know what you like, but I like it chewy.

I knew people used cold water or warm water to mix with the glutinous rice flour, and to make it like a dough, and then turn it into small dumplings like balls. You may put in different kinds of fillings like black sesame, peanut paste, red bean paste or whatever you want; but I like it simple and traditional, I like making it into small balls plainly or stuff the balls with dark slap sugar. One more thing I like, is to make the dumplings chewy. If serving it as a dessert, I like put these little dumplings into a sweet soup cooked with dark sugar and ginger. Forgot to tell you, I use hot water to mix with the glutinous rice flour.

我知道很多朋友用冷水或溫水糯米粉混合,搓成團,再搓成湯圓。 你可加入不同的餡料,如黑芝麻,花生,紅豆或其他作餡; 但我喜歡造點簡單和傳統只單純把粉糰搓其成小圓球,或加入一顆黑糖粒。 還有我喜歡湯圓有嚼勁。 如果配甜湯,那我一定會煮個薑湯黑糖湯圓。差點忘記說,我是用大熱水混粉成糰的。





Chewy Glutinous rice dumpling in Ginger Sweet Soup

Ingredients:
Glutinous Rice Flour 300g
Hot water 200 ml
Dark Sugar Cubes  some (optional)

For Sweet Soup
Dark Sugar  to taste
Ginger, sliced and patted  2 - 4 thick slices (to taste)
Water  1.5 L

Method:
1. In a big bowl, add in glutinous rice flour, make a hole in the center, pour in hot water gradually and mix it using a long pair of chopsticks to form a dough, then knead it till forming a ball, cut it into 3 pieces, and then roll each piece into a long tube and cut to the size you like, and make each small piece into a ball-like dumpling
2. You may stuff the dumplings with dark sugar cubes, but it is optional
3. Boil dark sugar, ginger slices with water in a pot over medium high fire and bring it to boil and cook for another 5 minutes till sugar melted
4. Add the glutinous rice dumplings into the sweet soup(3), reduce heat to medium and cook till rice dumplings float up to the top, cook for another 1 minute, cover with a lid, turn off fire and let stand for 5 minutes.  Serve the dumplings with sweet soup.

Cooking Tips:
1. Hot water makes the glutinous rice flour partly boiled and gives it a chewy texture

材料:

糯米粉  300 g
熱水  200 ml
黑糖粒    適量(可免)

黑糖薑湯:

黑糖   適量
生薑,切片,拍鬆  2 - 4 厚片(隨意
水   1.5 L

做法:

1.在大碗中,加入糯米粉,在中間開一個洞,逐漸倒入熱水,同一時間用長筷子混合,再用手揉成糰,切成 3 份,把每份捲成長管狀,切出自己喜歡大小,搓成小湯圓
2. 可隨意包入糖粒,搓成黑糖餡湯圓
3. 鍋中加入黑糖,生薑片連水中大火煮沸,逐煮5分鐘,直至糖融化
4. 將湯圓放入甜湯(3)中,轉中火,煮至湯圓完全上浮,再多煮1分鐘,蓋上蓋子,熄火,靜置5分鐘。盛上湯圓連甜湯享用

1. 熱水使糯米粉部分煮沸,並使其更耐嚼
