Lemon Ginger cake with sweet lemon glaze . 檸檬薑汁蛋糕

I shop at Amazon very often and like very much the bundt cake molds I got from Nordic ware. I have a couple of the bundt cake molds and cookie stamps, but the one I like the most is always the Nordic Ware Platinum Collection Heritage Bundt Pan, it looks classic but stylish, simple and elegant.

I seldom buy cakes from shops as I do not like cakes which are too sweet. I enjoy baking my own cakes since I found my homemade cakes soothe my not-so-sweet tooth better, and I enjoy very much baking cakes at home, I have a lot of fun just like making arts and crafts. And the cake aroma makes me drooling when the cake comes out from the oven.

Looking at the swirl bundt cake mold, I really wanted to bake a cake today. I found lemon and ginger in the kitchen, so I squeezed juices and put them into my bundt cake ingredients, the cake came out so soon afterwards, I let it cool for a while and then topped it with sweet lemon glaze. Ooh yum.

Ware Platinum Collection Heritage Swirl Bundt Pan (旋風蛋糕模)。我愛它經典又時尚,簡單而優雅。

我很少在街店買蛋糕,因為我不太好甜。我烤蛋糕一般都是為家人和親友而烤,而且烤蛋糕像極做手作,我很享受造蛋糕的過程和出爐一刻的興奮;看著蛋糕升起來又金金黃黃的,即使我不好甜,還是想咬它一口。

今天看著旋風模,好想烤一個蛋糕。在廚房裡找到常備的檸檬和薑,兩樣都是我喜愛的,就二話不說把它們擠了汁,放進我的蛋糕材料裡,一會兒蛋糕就出爐了,待涼後加上雪白的檸檬糖霜,正正就是我想要吃的味,實在太好了。









Lemon Ginger cake with sweet lemon glaze


Ingredients:
Bread Crumbs, finely grated 3 tbsp
Lemon Zest 2 tbsp
Lemon Juice 2 tbsp . 
Ginger juice 2 tbsp
All-purpose Flour 380g
Baking Soda 4g
Aluminum-Free Baking Powder 4g
Butter, soft 115g
Rice Bran Oil 115g
Sugar 190g
Egg, whole 3 pc
Milk 250ml


Lemon Glaze:
White Sugar 95g
Lemon Juice, freshly squeezed 85ml



Method:

1. Prepare lemon glaze: mix sugar and lemon juice in a bowl, let it stand for 60 minutes or until the sugar is completely dissolved, remember to stir occasionally
2.  Preheat Oven at 160C. Grease cake mold and sprinkle in finely grated bread crumbs. 
3. Mix lemon zest, lemon juice and ginger juice in a bowl
4. Sift flour, baking soda and baking powder into another bowl
5. In a big bowl, beat butter and sugar till pale and fluffy; then add in eggs, one piece at a time and mix well; divide flour mixture in 3 portions and one portion in milk alternately, the last batch should be flour.  Mix in lemon and ginger juice mixture well.  And then pour the batter into the cake mold, shake slightly to extract excess air.
6. Bake for 55 t0 60 minutes or until cake is fully cooked
7. Turn mold upside down and let cool, cake will come out when cool, put it on top of a parchment paper
8. Mix well the lemon glaze and scoop it on top of the cake between gaps or at your decision.







檸檬薑汁蛋糕


材料:
幼麵包糠   3 Tbsp
即磨檸檬青  2 Tbsp
鮮榨檸檬汁  2 Tbsp
鮮榨薑汁  2 tsp
中筋麵粉  380 g
蘇打粉  4 g
無鋁發粉  4 g
軟身牛油  115 g
米糠油  115 g
  190 g
全蛋  3 pc
牛奶  250 ml



檸檬糖霜 :
白糖  95 g
鮮榨檸檬汁  85 ml



做法:
1. 
先準備檸檬糖霜:將糖和檸檬汁混和於碗中,靜置60分鐘或直至糖完全溶解,偶爾攪拌。
2. 
焗爐預熱至160℃。焗盤塗油,灑上幼麵包糠
3. 
在小碗裡,拌勻檸檬青,檸檬汁和薑汁,備用
4. 
在中碗中,篩入麵粉,小蘇打粉和發粉
5. 
在大碗中,打起牛油和糖,至輕和蓬鬆。逐隻蛋加入,每次加入後要拌勻。然後將粉類 分三 次加入, 也交替加入牛奶,最後加入剩餘麵粉。再拌入檸檬薑混合物。倒入焗盤, 略敲出空氣
6. 
烤約  55 - 60 分鐘或至蛋糕全熟
7. 
翻模待涼10分鐘。蛋糕退模放在墊紙架上
8. 
再拌勻檸檬糖霜,用匙淋上暖蛋糕,待涼即可享用
