Many friends asked why I was willing to spend so much time on writing my posts and sharing recipes in great details. I said if someone really wanted to share, and thought it's a happy sharing, they should lead the people who were following the right way. I want the people who try on my recipes could make it right at the first time like what my helper does.
Frankly I like all the food I cook, and all the breads and cakes I bake as they are made to my taste. I am happy that my helper achieves it most of the time including the naturally leavened bread.....see the baguette she just baked and scored. She could manage to make the baguette with a crackling crisp bread crust, and open and irregular crumbs too. I feel so happy for her and all this happiness is a result from my sincere sharing.
許多朋友問我為什麼願意花這麼多時間寫我的帖子和詳細分享食譜細節。我說如果有人真心想分享,又覺得分享是快樂的,那麽分享的 首要條件是帶領跟著食譜做的朋友走對的路。我希望這些朋友,只要跟著食譜做,即使第一次做也能做到。好像我的多位家傭小姐一樣,拿著食譜,跟我指導,各式菜餚,蛋糕,麵包和甜食都做得到,也做得好。我不是說我做得很好,我是說我的成品做對了我和家人口胃。
我很喜歡自己煮的所有菜式,以及自己造的麵包和蛋糕,因為都是依據自己的口味去做。我很高興我的家傭小姐也能因循我的習慣,把我教她的都記著,包括 造比較難控制的純天然酵母和純酸種發酵的麵包......看看她剛烤好的天然百香果酵母法國麵包,她已能做到麵包外脆內軟兼有大氣孔;看著她做得到,我也很高興,這些都是誠心分享帶來的快樂。
