Souffle Pancake Tower
(Recipe is for two Cake rings with diameters of 12.5 cm and 8 cm, height: 5 cm)
Ingredients:
A) Egg Yolk 3 pc
Sugar 15g
Milk 130g
Lemon Juice 10g
Butter, melted 15g
Cake Flour 100g
Corn Starch 5g
Natural Vanilla Extract 5g
B) Egg White 4 pc
Lemon Juice 5g
Sugar 25g
Method:
1. Sift Flour and Corn Starch twice; brush the rings with oil and dust with flour
2. Beat egg yolk till pale, add in sugar and beat till fluffy
3. Add in milk, lemon juice and beat till well mixed
4. Add in Natural Vanilla Extract, then add in flour mixture, mix well
5. Beat egg white till fluffy, add in lemon juice, then sugar, beat till soft peak
6. fold in 1/3 of egg whites to the egg and flour mixture, then add in all to the egg whites and fold in slightly till combined
7. heat up a pan, brush a little oil or melted butter on the pan, clean with a kitchen paper; put the two cake rings onto the pan, pour the mixture in till 70% full, sprinkle a little water around the rings, turn fire to medium low, put the lid on, and fry for approx 6 minutes; turn the pancake to the other side, and fry for another 4 minutes.
8. Decorate to your desire and serve with syrup.
Cooking Tips:
1. Melted Butter can be substituted by Milk
2. For Pancake Tower, I have put extra 5g of Cake flour into the Recipe; for fluffy Souffle Pancake, you may reduce cake flour to 95g
3. This Recipe is mild sweet as it will be served with Syrup, you may add extra sugar if you tend to serve it plain as it is.

疏乎里鬆餅蛋糕
(食譜足夠用於兩個直徑: 12.5 cm 和 8 cm ,高度 : 5 cm 的蛋糕圈)
材料:
A)蛋黃 3 PC
糖 15 g
牛奶 130 g
檸檬汁 10 g
牛油,融液 15 g
低筋麵粉 100 g
粟粉 5 g
天然香草油 5 g
B) 蛋白 4 pc
檸檬汁 5 g
糖 25 g
做法:
1. 低粉和 粟粉過篩兩次; 蛋糕圈先掃油灑粉
2. 蛋黃打至淡色,加入糖,直至蓬鬆
3. 加入牛奶,檸檬汁,混勻
4. 加入天然香草油,然後加入麵粉混和
5. 蛋白另盆打至蓬鬆,加入檸檬汁,然後加糖,打至起勾
6. 把 1/3 蛋白混合物拌入蛋黃混合物,再與其餘蛋白混合物輕手拌勻
7. 燒熱平底鍋,用廚房紙輕抹點牛油,放上兩個蛋糕圈,倒入混合物至七成滿,在蛋糕圈四周灑點水,轉中小火,上蓋,煎約6分鐘; 反轉另一邊,再煎 4 分
8. 可隨意裝飾;吃時澆上少許糖漿
提示:
1. 牛油溶液可用牛奶代替
2. 造鬆餅蛋糕,我在食譜多加了5 g ; 做鬆餅,可調低麵粉至95g
3. 這是微甜食譜,伴糖漿吃;好甜的,可隨意增糖
