萬用麵糰之十三....酸種圓包
I was out of town for more than a week, and had to finish the work I have had on hand before I found the time to post it here.
I have a lot to share, but don't get the time to write and post. Friends want me to share some simple Cantonese dishes when I have time, so I will do it on my next post.
Today, share here again my everything dough using my 2-year old sourdough starter. It's an interesting piece of boule which opened like petals when baking.
I used my everything dough without any changes this time. Preheated oven with a 24 cm dia.cast iron pot at 250°C, baked at the same temperature with the lid on for 25 minutes, then reduced to 210°C for 10 minutes and 190°C for 5 minutes.

今天,分享我用萬用麵團和酸種做的大圓包。這圓包很可愛, 在烤箱打開得像朵大花,看起來很誘人。
這次萬用麵團沒作任何改變。烤法: 烤箱連24cm 帶蓋鑄鐵鍋預熱至250°C,二發後麵糰放鑄鐵鍋加蓋烘烤25分鐘,然後210℃烤10分鐘,190℃ 多烤 5 分鐘。
